Wholesome Soups
The best soups are made with strong flavoured stock. I usually buy a can of beef or chicken consomme to use as a base. It really depends on your own style of cooking and for me it sometimes comes down to convenience. You can make your own beef or chicken stock in the crockpot and the strained stock will keep for up to a week in the fridge.
Basic Beef Stock
1.5kg soup bones
250g chopped shin of beef
2 stalks of celery
small piece of turnip and parsnip
4 peppercorns
1 onion cut in half (not peeled) and stuck with 2 cloves
bouquet garni (bundle of herbs usually tied together with string)
8 cups of water
If you buy the shin from the butchers, ask them to crack the bones.
Remove any large pieces of meat, chop finely.
Wash the bones and place in the crockpot with the chopped meat, vegies, and the bouquet garni.
Cover with cold wter and cook overnight 8-12 hours on low with the lid on.

Generally this bundle consists of a bay leaf, sprig of thyme, tarragon, chervil or other available fresh herbs, 3 or 4 stalks of celery - tie together.

Potato Soup
6 potatoes - cut into bite size pieces
2 leeks washed and cut into bite size pieces
2 onions chopped
1 carrot, pared and sliced
1 stalk of celery, sliced
6 cups of water
3 chicken bouillon cubes
1 tablespoon salt
pepper
1/3 cup of butter
1 cup evaporated milk
Chopped chives
Put all ingredients in the crockpot. Cover and cook on low for 10-12 hours. For a variation you can mash the potatoes before serving.
Serve sprinkled with chopped chives. Serves 6-8.
